This recipe is from the "Will you be my Valentine?" shoot and was inspired by these sweet donut peaches l found at my local fruit store! I love it when l find something new to use and these cute little flat peaches were perfect to make galette tartlets with but if you can't find them then normal peaches will suffice but just cut yours into 3 instead of in half.
Ingredients
6 donut peaches (4 normal peaches)
12 washed strawberries
2 sheets of puff pastry
1/4 cup cinnamon sugar
1 tbs melted butter
Method
1. Line 2 baking trays
with baking paper and preheat oven to 200 degrees Celsius.
2. Remove stone from peaches with an apple corer. This will make a nice round hole for your strawberry to sit in later. Cut peaches in half horozontially or into 3rds if using normal peaches.
3. Using a 7.5cm round cookie cutter cut out pastry circles and place onto the baking trays.

4. Brush pastry circles with melted
butter and then add a nice sprinkling of the cinnamon sugar.
5. Place peach flesh side down onto the pastry circle and then bake in oven for approx 20 - 25 mins or until pastry is puffed and golden

Place tartlets onto a baking rack and let cool
7. Place a strawberry in the hole just prior to serving along with a little double cream on the side.
